Slow Cooker White Chicken Chili

Andddd on the menu in our house tonight, we have Slow Cooker White Chicken Chili.

I love meals that I can prep-up, and start before leaving for work in the morning.  It’s so nice to come home to a house that smells amazing, with dinner all-but ready to go.

What You’ll Need

4-6 Chicken Breasts

1 medium Yellow Onion

4 cups Chicken Broth

2 15.5 oz. cans of White Cannellini beans

2 4.5 oz. cans of Green Chiles

1 cup canned Coconut Milk

2 teaspoons Cumin

1 teaspoon dried Oregano

1 teaspoon Garlic Powder

1 teaspoon Onion Powder

1 teaspoon Salt

1/2 teaspoon Black Pepper

A dash of Cracked Red Pepper

Directions

You guys are going to love this!! The directions are SO simple. Cut the chicken breasts into quarters. Then throw everything except for the beans in the crockpot, and cook low and slow for 6 hours.  At the last minute, pour the beans in, and cook for roughly another 15-20 minutes. Finally, Shred the chicken and serve. BAM; that easy!

SIDE NOTE: I really like this dish with flour tortillas.  The original recipe also calls for a few other ingredients such as corn, and optional cilantro; but I always do a little improvising to put my own twist on dishes.  Sometimes that is how we find our very favorite recipes! Enjoy!
