OMG! So I am hooked on spaghetti squash this season, and these spaghetti squash sausage boats were nothing short of amazing! I saw the recipe for these on Instagram yesterday morning via @paleodietlovers_, and I just knew we had to give it a try.
What You’ll Need
1 medium Spaghetti Squash
1 package Italian Chicken Sausage (or regular Italian sausage)
4 cloves of minced Garlic
Extra Virgin Olive Oil
Salt and Pepper
Preheat your oven to 400 degrees, then pop the spaghetti squash in the microwave for 3-4 minutes to soften in up so you can easily cut into it. Next cut the squash in half lengthwise, and discard all the seeds( If you are feeling really sassy, you can use my Roasted Acorn Squash Seeds recipe, and substitute in the spaghetti squash seeds.). Drizzle the spaghetti squash in olive oil, and sprinkle with salt and pepper before popping in the oven for 40-45 minutes.
When the squash is all done baking and is cooling down, heat up some olive oil in a skillet and toss in the garlic. Sauté for 3-4 minutes, then add in the sausage. Cook for 10-12 minutes.
Once your squash has sufficiently cooled, scrape the squash with a fork to create spaghetti like strands. Mix all of the spaghetti in a large bowl with the sausage, and then season to taste.
Right before serving, fill the squash shells back up with the mixture and serve warm to create the boat effect (:
