The Case of The Terrible Meatloaf

So last night I took on homemade meatloaf and mashed potatoes. I’ve made meatloaf before, but I always use the premade kind from Publix that you just have to bake. In so far as mashed potatoes, I am a total potato connoisseur, and have mastered the art of such. With this all in mind, apparently my meatloaf skills could REALLY use some work.

I’m going to start off by saying that I have no idea what I could have done wrong. I followed the recipe perfectly, and It even looked awesome when I pulled it out of the oven. That was when things started to go down hill.  As you may know, when cooking meatloaf, you are supposed to let it rest for at least 10 minutes after removing from the oven. I let it rest about 15 minutes, and decided to try to remove it from the baking dish, and place it on a serving platter.

This damn meatloaf COMPLETELY fell apart. It looked like mystery meat, all soft and in no way adhered together. Again, NO idea what I could have done wrong. It tasted ok, but just a little too soft and mushy; not at all firm like you would expect.

My first homecooked meal as an engaged woman was a complete FAIL. Thank God this man loves me. As for the mashed potatoes, stay tuned for my kick ass recipe in the next few days. Guess we will all just have to wait for a new meatloaf recipe *inserts shoulder shrug*.
